Panzanella is a Tuscan salad comprised of numerous veggies and bread soaked in a dressing. The "Pan" refers to the bread, the "zanella" refers to a "deep plate" to hold this substantial salad.

Wintertime Panzanella
A new wintertime favorite
- Raspberry vinaigrette from Irish Homeplace.
- Homemade breadcrumbs. Make sure to crunch them up into smaller pieces, not as large a crouton but NOT dust
- Greens available in winter and cabbage too.
- Goat cheese
- Refrigerator pickles: julienned beets, daikon radish, purple onion. Go here for basic brine recipe.
Toss together at the last minute and plate.
I find leftovers are a delicious bed for a few poached eggs in the morning.
