Tomato Rice
Ingredients
- Bell pepper – 1, cut into thin long slices.
- Basmati Rice 1.5 cup, washed and rinsed.
- Onion – 1 ,cut into thin long slices and half.
- Tomato – 3 , cut into cubes.
- Ginger – 1/2 inch.
- Peas – 1 cup
- Red chilli powder – 1 tsp
- Garam masala – 1/2 tsp
- Coriander powder – 1tsp
- Cumin powder – 1/2 tsp
- Turmeric powder – 1 tsp
- Water – 3 cups
- Salt – to taste.
Tempering
- Cashew nuts – 3 chopped
- Bay leaf – 1
- Star anise -2
- Cardamom – 2
- Cinnamon stick – 1 small piece
- Ghee – 2 Tbsp.
Pre-Prep
- Add ginger, tomato, red chilli powder, garam masala, coriander powder, cumin powder into a blender and grind.
Method
- Heat Ghee in a pressure cooker at low, add bay leaf, cinnamon, star anise and cardamom sauté till it gives a pleasant aroma.
- Add cashew nuts sauté till light brown.
- Add onion sauté until light brown then add bell pepper, peas and rice and mix well.
- Add turmeric powder and ground tomato and sauté for 10 minutes.
- Add water and salt, stir content and close the pressure cooker. Place the whistle when steam is released. Let it cook for 15 minutes in low or when the first whistle blows.
