	Red Cabbage & Apples
In a large heavy, non-reactive pot sauté in
- ½ cube butter:
 - 2 med. onions-diced
 
*option -you could include 4 strips of diced bacon to this step for flavor
Cook for 10 min. over med heat.
Add
- 2-3 diced apples (no need to peel our apples from the farm)
 - 2 lbs of shredded red cabbage
 - 1 cup of apple cider vinegar
 - ½ cup brown sugar
 - 1 tsp sea salt
 - ½ tsp black pepper
 
Stir and bring to a boil.
Cover and lower heat to simmer and cook for 45 min.
Stir several times throughout.
Taste- I like to add a bit more vinegar for bite at this stage, but you be the judge.
If you’re serving this as a side dish you could sprinkle the top with crisp bacon pieces or serve w/ bratwurst or roasted pork.
