Try out this spice rub with cauliflower.
We cut the cauliflower into bite size pieces and tossed it with 2 Tbs of spice rub, 4 Tb olive oil and a heavy sprinkle of salt.
Roast them in the oven at 425 degrees with the convection fan on (if you have one). They should be nicely toasted but not black. Oven’s vary so after 12 minutes watch them closely.
for roasting veggies or meats.
Spice mixture from Week Seven use equal amounts of:
- Cumin seed
- Coriander seed
- Fennel seed
- Black pepper seed
- Toast the seeds in a cast iron skillet until they just begin to smoke.
- Remove from the heat, cool a bit and then grind in spice mill.
- Store in a jar with a tight lid in a cool, dark cupboard.
