Did it curdle?
If you experience curdling in the process of making this sauce, don't panic. Put it in a blender (i.e. higher rpm) and drizzle water into the blender until it goes into a nice smooth emulsion.
Want it even creamier?
For a creamier version of Mimi's dressing add 3-4 Tb of whole milk yogurt.
Mimi's Tahini Dressing
- 1 cup tahini (ground sesame seeds)
- 1/2 cup fresh lemon juice
- 3 Tb olive oil
- 3 mashed garlic cloves
- 1/2 cup water
- 2 tsp sea salt
- 2 Tb sesame seed oil
- 2 Tb honey
Mix in a blender and store in the refrigerator. Be careful not to over mix the oils in a food processor or blender. You can over heat them and ruin the flavor. A blender works better than a food processor.
Use as a dipping sauce w/ stuffed collard rolls or over a ribbon cut kale salad.
