If you're not accustomed to braising a couple of bunches of greens each week (minute 2:28), the practice will be transformative to your menus and diet. The Pacific Northwest is wonderfully rich with Greens, especially in the Spring and Early Summer. This video has a number of ways to start taking advantage of this season. The mock quiche is mighty fine eating as well whether you make it for company, a family dinner or a tray of one-handed lunches on the run.
