Arugula Delight Salad
(yields 3-4 servings) Modified from original at http://www.ishafoundation.org/us/blog/spinach-delight-salad/
Ingredients:
- 1 bunch Arugula , cut into 1” pieces
- 3 cucumbers, chopped
- 2 stems fresh mint, finely chopped
- ¼ bunch fresh coriander, finely chopped
- ½ cup coconut, grated
- 1 carrot, grated
Dressing:
- 1 tsp mustard powder
- 1 tsp water
- 3 tbsp orange juice
- 1 tbsp lemon juice
- 1 tsp honey
- Salt & pepper to taste
Directions:
Combine Arugula , cucumber, mint, coriander, coconut and carrots. Prepare remaining dressing ingredients separately. Mix mustard powder with a little water to form a paste and let it sit for 15 minutes. Blend with orange juice, lemon juice and honey. Add salt and pepper, to taste. Toss with salad.
