Yogurt Cabbage Slaw
w/Apple Curry Sauce
Strain 1 qt of whole milk yogurt.
- Measure out 2 cups of thick strained yogurt.
- Mix in 3 Tbs sugar
- 1 tsp salt
Set Aside
Shred one whole cabbage and place in a large bowl. Add 1 tsp of sea salt and mix in thoroughly.
Let the cabbage sit (sweat) for about an hour. It will drop out some liquid and soften the cabbage shreds.
Drain off the liquid.
Add to the cabbage:
- 1 minced onion or 5-6 green onions cut on the diagonal
- 2 apples cored but not peeled, cut into small chunks
- 1 carrot shredded or julienned
Stir in the yogurt mixture and let it rest for 30 minutes to meld the flavors.
You could make it earlier in the day and put it in the fridge.
Make the apple curry sauce.
When serving, plate out the slaw and top it with a generous spoonful of apple curry sauce.
This would go great with grilled fish. If you’d like a bit of crunch use toasted pepitas on top.
