Quick Pickles

Julienne:

  • Radishes/carrots/kohlrabi

Pour boiling, seasoned, rice wine vinegar over them.

Allow to cool.

Store in a glass jar in the fridge.

These last for weeks! Great alongside a rich winter stew or soup, inside a hearty sandwich or just a quick snack.

Important safety note:

NEVER “CAN” pickles with rice wine vinegar, meaning Don’t water bath process jars using rice wine vinegar.  It’s fine for refrigerator pickles.
