Fruit Salad with Yogurt Sauce
Fruit Salad:
- 3 oranges
- 4 bananas
- 3 apples
- 3 Asian pears
Peel oranges and cut into chunks.
Remove banana peels, cut banana in half lengthwise and then into chunks.
Wash apples. If organic, leave peel on, core and chop into chunks.
Wash pears. If organic, leave peel on, core and chop into chunks.
Toss fruit with 2 Tbs. of lemon juice to prevent browning.
Yogurt Sauce:
Mix together:
- 1 cup plain yogurt
- 1/3 cup of your favorite jam
Option: Add a mix of chopped nuts to give you lots of go power.
Fold the yogurt sauce into the chopped fruit.
If you are using berries, don’t add them until 10 minutes before serving.
You can make this the night before and take some for lunch the next day.
Variations:
This fruit salad could become dessert by sprinkling it with granola.
Here are some other possibilities when they are in season:
Blackberries, cherries, raspberries, peaches, nectarines, pears and grapes.
Plan Ahead! Think about picking some local berries during the summer and freezing them on trays.
Once they are frozen you can put them in plastic bags for storage in the freezer.
