Fruit Compote

In a non reactive skillet over medium heat

  • 2 Tb butter &
  • zest from 1 orange

Lightly sauteed fruit in a butter/orange glaze.

Cook until you begin to smell the orange zest

Add

  • 2 apples, diced

Cook 2 min.

Turn up the heat and

  • add the juice from ½ an orange

Cook until the juice reduces by half.

Add

  • 2 more Tb of butter and
  • 4 Tb real maple syrup

Heat until it bubbles.

Turn it out into a bowl and serve hot over waffles or pancakes or oatmeal.

 

Options:   Add a pear or two that might be past their prime.

Scale up the recipe to serve a crowd; it lowers the chances of spilling the syrup bottle AND the butter is already melted so it won’t tear your waffle!

Plus, it’s pretty.
