Creamy Orange Dressing

In a blender:

  • the zest from 1 orange
  • 1 sectioned orange
  • 2 cans drained 11oz mandarin oranges
  • 1 tsp Dijon mustard
  • 2 T of honey
  • 6 T seasoned rice wine vinegar
  • 1 tsp salt
  • ½ tsp pepper

Blend thoroughly

Add

  • 1 cup of olive oil
  • ½ c of whipping cream (or substitute whole yogurt if you like, but it will be tangier and some other adjustment may be required)

Pulse but don't over blend or you will risk burning the oil.
