Apple Crisp

In a large bowl stir together:

Add to bowl:

  • 1/2 cup flour
  • 1 tsp. salt
  • 1 tsp. cinnamon

Stir until combined.

In a separate small bowl stir together:

  • 2 cups granola  (See Granola Recipe)
  • 1/2 cube butter - melted
  • 1/4 C flour
  • 1/2 C Brown Sugar

Pour fruit mixture into a greased 9 x 13 pan

  • Dot with 4 Tbs. butter 
  • Top with granola mixture

Bake for 40 minutes

After 40 minutes, check to see if the fruit is soft and the juice has thickened. It will probably need more time.

You may need to add some foil over the granola to prevent it from becoming too brown. Place the foil on top, but don’t seal it to the edges of the baking pan.

Bake for another 10-15 minutes.

Cool for 20 minutes before serving.


If you want some more zing and pizazz in your apples add Rhubarb or Craisins or Blueberries

Mix:
  • 6 stalks of rhubarb—cut in 1-inch pieces or 1 cup Craisins or 2 cups blueberries
  • 2 cups of sugar-use 1 ½ cups sugar for blueberries or craisins

Let this mixture sit for about 15 minutes, or until the juice runs from the fruit then mix in with the apples.

This is great on it’s own or with vanilla ice cream.  Enjoy!
