This dressing is great on salads and chicken. Continue right on through to dessert and top off a scoop of vanilla ice cream.
Peach or Nectarine Dressing
- 3 tbsp. Sherry vinegar
- 1 tbsp chopped, fresh fennel leaves or thyme or other herb
- 1 ripe peach or nectarine, peeled and diced fine
- 5 tbsp olive oil
Combine first 3 ingredients and whisk together.
Add oil slowly whisking until fully blended.
