Tomato Chutney
Ingredients
- Tomatoes – 5, finely chopped.
- onion – 1/4 ,finely chopped
- Green chillie – 2
- Cilantro – 1 tbsp., finely chopped.
- Fresh/ frozen coconut – 2 tsp.
- Salt to taste.
- Oil – 1tbsp.
- Mustard seeds – 1/4 tsp.
- sugar – 1tsp (optional)
Method
- Heat 1 tsp oil in a pan to medium, add onion and sauté till transparent,
- Add chopped tomatoes and cook until all the moisture is absorbed.
- Allow the above mixture to cool, grind with grated coconut, cilantro and chilies.
- Heat the remaining oil to medium, add mustard seeds, let it crackle.
- Add the ground tomato mixture, sugar and salt.
- Cook for 10 minutes.
