Raita
Thanks so much to Aruna for not only sharing her recipes with us but for demonstrating them at the Jubilee Farm Cascading Kitchen on the occasional Saturday.
Serve this sauce with Fenugreek Rice.
Raita (yogurt with vegetables)
Ingredients
- Plain yogurt- 2 cups
- Cucumber – 1/2
- Onion – 1 small
- Tomatoes- 3
- Cilantro- handful
- Salt to taste
- Green chili- 1 ( optional)
Procedure
Finely chop onion, cucumber, cilantro and tomatoes.
Place in a large bowl and add salt, yogurt and a slit chili.
Mix the ingredients and set aside for 15 minutes.
Tip:
If you do not want Raita to be spicy don’t forget to remove the slit chilies before serving.
