Peanut Lime Salad Dressing
- 2 Tbs fresh lime juice
- 2-3 Tb water
- 3 Tb oil (I use grapeseed or olive oil)
- 1 Tb. Sesame seed oil. (1.5 if you want a richer flavor)
- 1 Tb. Honey
- 2 cloves of crushed/minced garlic
- 1-2 Tb rice vinegar (depends on how bright you like it)
- 1.5 Tb. Soy sauce
- 1 tsp (less for kids). Asian chili paste
- ¼ cup peanut butter
Whisk all ingredients together by hand. (A blender will tend to burn the dressing)
Use it on shredded cabbage, misc. chopped greens, lettuce that might be a tad bitter from warm weather.
You can fill it out with buckwheat noodles and chicken for a meal-in-a-bowl.
Top it with slivered green scallions.
Store in the fridge. Bring to room temp before tossing your salad.
