Option: For a creamier version of Mimi’s dressing add 3-4 Tb of whole milk yogurt.
Mimi’s Tahini Dressing
- ½ cup tahini (ground sesame seeds)
- ½ cup fresh lemon juice1
- ½ Tb olive oil
- 2 garlic cloves-minced
- ¼ cup water
- 1 tsp sea salt
Mix in a blender and store in the refrigerator. Be careful not to over mix the oils in a food processor or blender. You can over heat them and ruin the flavor.
Use as a dipping sauce w/ stuffed collard rolls or over a ribbon cut kale salad.
