Oven Baked Hash Browns
Preheat oven to 425°
Plan on 1 potato per person...or if you’re making breakfast burritos, cook about 2 lbs.
Prepare Potatoes:
Scrub Yukon Gold or Red potatoes very well under water.
Grate Potatoes:
Grate the potatoes on the largest size of your grater. (If it has different sizes)
Put in a big bowl and gently toss with 1/3 cup of grapeseed or peanut oil (some high-temperature oil, not olive oil) and a few pinches of kosher salt.
*If you have a food processor use the coarse grater. The bigger the shred size the better the hash browns.
Bake Grated Potatoes
After tossing grated potatoes in high temp. oil, spread them out on a cookie sheet in a thin layer.
Bake at 425°, turning the tray every 10-15 minutes. If you have a convection oven, use the fan and turn the temperature down to 400°.
After cooking the first side, so that it looks nicely browned and crunchy, (sometimes this takes 30 minutes) cut it in sections and turn the hash browns over for the final 5-10 minutes.
If you’re making breakfast burritos, remove from the pan and allow them to cool before assembly. Cut the hash browns into strips so they'll fit in the tortilla.
