Chicken Wings in a Pickle Juice Marinade

Wash a tray of chicken wings.

Put them in a non-reactive baking dish so they can spread out in a single layer.

Pour pickle juice over the wings and let marinate for at least 6 hours in the fridge.

 

30 min before baking, remove from the fridge, preheat the oven to 425°.

Pour off any liquid from the wings.

Pour ½ cup olive oil over the wings with a light sprinkling of salt.  Stir throughout the wings and spread them out in a single layer.

 

Place wings in preheated oven and turn on the convection fan if you have one.  Bake 25 min.  Stir.  Bake another 25 min.

Serve hot.

We like eating these for a treat with a very large salad.
