Cheesy Potato Pancakes

  • 2 cups of mashed potatoes
  • 1 cup of shredded cheese
  • 1 egg

Mix together and form into multiple 3 inch pancakes about ½ inch thick.

Cook them in a preheated frying pan with butter or cooking oil (1/4 cup)

Use med low heat and slowly brown them on both sides. 7 min/side –at least!

Add a salad or sliced fruit and you have a quick meal.
