The benefits of cooking in bulk
If you're following our "5 Week Menu" you will have boiled and mashed four pounds of potatoes earlier in the week. With those papas in the refer, these Cheesy Potatoe Pancakes are quick and easy.
Cheesy Potato Pancakes
- 2 cups of mashed potatoes
- 1 cup of shredded cheese
- 1 egg
Mix together and form into multiple 3 inch pancakes about ½ inch thick.
Cook them in a preheated frying pan with butter or cooking oil (1/4 cup)
Use med low heat and slowly brown them on both sides. 7 min/side –at least!
