Béchamel Sauce

This quantity works well for one lasagna.

  • Melt 6 Tbs butter in a large frying pan.

Add

  • 6 Tbs flour

Cook for about 4 min on med heat but don’t brown the butter.

Then add:

  • 1 qt (4 cups) milk

Whisk briskly as you add milk to flour mixture so you don’t get any lumps.

Stirring constantly, slowly bring to a boil.

Turn heat down to simmer and cook for another 15 min.

 

Seasoning options:

  • Salt
  • Nutmeg
  • Black pepper
  • Chipotle powder or any ground hot peppers.

 

Note:  You can use chicken stock in place of milk.
