Arugula Blue Cheese Green Sauce
Combine in a bowl:
- 4-5 cups chopped arugula
- ½ cup chopped almonds
- Zest from 1 lemon plus the juice (small )
- ½ med. purple onion–minced
- 3 small cloves garlic–minced
- ½ cup blue cheese (possibly a bit much but I didn’t want to waste it!)
- Splash of olive oil
Lightly Pulse all of the ingredients in a food processor.
Store in a jar in the fridge if you’re going to use it all within the week OR
Freeze in ice cube trays to use later in the winter over pasta or roasted veggies or ???
This is really good stirred into the marinated potato salad.
